World Food Day 2026: How a New Vegetarian Dish Takes Shape at QB Cucina

At QB Cucina, a vegetarian dish begins with the season, the ingredients available from the estate gardens and selected regional suppliers, and the creativity of Chef Federico Viti. Vegetables are central to the menu, with texture, flavour and balance guiding their preparation. This reveals the choices behind a meal.

World Food Day 2026 takes place on 16 October under the Food and Agriculture Organization’s theme, “Innovate today. Nourish tomorrow.” The occasion invites reflection on growing, preparing and sharing food, alongside innovation and traditional knowledge.

From the estate gardens to the kitchen, each seasonal ingredient brings its own character to the table.

World Food Day 2026: Why Begin with Seasonal Ingredients?

The rhythm of the harvest is a natural starting point for QB Cucina. Rather than building every menu around ingredients available throughout the year, the kitchen considers what the season offers and how its qualities might translate into a memorable vegetarian dish.

One Belvedere Tuscany spans 50 hectares in Castellina in Chianti, between Florence and Siena. Vegetable gardens, orchards, olive groves, vineyards and woodland shape the estate’s landscape. Produce from the gardens sits alongside ingredients sourced from selected regional suppliers, offering the kitchen both inspiration and flexibility.

Weather and harvest timing influence which vegetables are ready, and quantities can vary. This means a seasonal menu is never simply a fixed collection of recipes. It responds to freshness, availability and the possibilities of each ingredient, while keeping the pleasure of dining at its heart.

How Does a New Vegetarian Dish Take Shape at QB Cucina?

At QB Cucina, Chef Federico Viti draws inspiration from the seasons, allowing the freshness and character of each ingredient to guide his creations. His approach celebrates the simplicity of vegetarian cooking, where carefully chosen ingredients and considered techniques come together to create dishes full of flavour.

This philosophy is reflected in the menu through dishes such as tagliolini with porcini mushrooms, their broth and chives, where the earthy character of porcini takes centre stage. Another example is tortelli filled with goat blue cheese, accompanied by red turnip, rocket pesto, almonds and rice chips, bringing together distinctive flavours and textures in a carefully composed dish.

Each creation reflects the natural qualities of its ingredients. From the preparation of vegetables to the finishing touches on the plate, the focus remains on simplicity, flavour and harmony.

This approach is rooted in the restaurant’s name, QB, which stands for the Italian expression “quanto basta”, meaning “just enough.” Inspired by traditional Italian cooking, it reflects an intuitive understanding of how much is needed to bring out the best in each ingredient.

The dishes highlighted were served at QB Cucina during the summer season. As our menu evolves with the seasons, reflecting the freshness and variety of each harvest, we invite guests to explore our latest menu for the current selection.

How Do Kitchen Decisions Help Reduce Food Waste?

Thoughtful cooking also involves decisions made before a dish reaches the table. Planning quantities, considering portions and finding appropriate uses for ingredients can all support efforts to reduce food waste. These are practical choices rather than promises that a kitchen produces no waste.

QB Cucina places value on fuller ingredient utilisation. The estate also describes composting, crop rotation and cover crops among its agricultural practices. These describe the management of kitchen materials and land, not measured environmental results.

The same specificity matters when discussing sourcing. Ingredients may come from estate gardens or selected regional suppliers, but individual dishes should not be described as wholly estate-grown or certified organic unless those details have been verified. Clarity allows guests to appreciate the food without overstating its origins.

World Food Day 2026: What Can Guests Learn at the Table?

World Food Day offers an opportunity to notice the decisions behind familiar pleasures: the choice of a seasonal vegetable, the patient preparation of a broth, or the balance between a filling and its accompaniments. Such details give vegetarian cooking depth and a sense of place.

At QB Cucina, lunches, gourmet dinners and cooking experiences provide different ways to explore this approach. The experience is rooted in the pleasures of Tuscan hospitality, where good ingredients, considered techniques and time at the table come together.

These choices do not solve global food challenges. They can, however, encourage curiosity about seasonal produce, food-waste reduction and using what is needed in everyday cooking.

A Dish Shaped by Its Ingredients
