Every artisanal, natural wine is unlike any other that has been or will ever be. Organic farming of the grape and vine, alongside natural fermentation, are the tools we employ to accentuate and reveal this uniqueness – each bottle an intimate, handcrafted expression of the land that shaped it.

But what truly sets our wines apart is our terroir – our land, our essence, captured in every bottle, waiting to be savored.

Natacha’s philosophy centred on sustainability and holistic practices. It employs regenerative agriculture techniques, focusing on restoring soil health and fostering biodiversity. The winery’s approach involves minimal intervention in the winemaking process, ensuring that each bottle reflects the natural terroir.
 
Through this philosophy, the winery seeks to create high-quality wines that are as environmentally responsible as they are exquisite, promoting harmony between nature and the art of winemaking.

Our approach is simple: we allow the wine’s natural uniqueness to shine, striving to preserve what nature so generously offers.

Fermentation is never forced – it’s guided by the native yeasts that arrive in the cellar through the thin layer of natural wax coating each grape. This ensures that every tank, like every person, carries its own distinct microbiota. Aging takes place in mature wood barrels, allowing the wine to breathe without overwhelming its essence.

Each bottle is filled by hand, unfiltered, preserving its pure expression.

We approach winemaking with humility. In terroirs as important as Chianti Classico, to craft a wine with a true sense of place, to bring forth something truly unique, you must protect its authenticity. That is the true source of real joy, and it is reproduced in no other way.

The techniques are very simple as very important:

  • grape harvested by hand in full ripening
  • collected in small boxes
  • soft destemming
  • no crushing
  • spontaneous fermentation

To renew the old is the essence of our philosophy. We have followed the wisdom of the farmers of yore – the land is not here to be shaped by us; we are shaped by the land.

What was once an abandoned tractor shed, left in disrepair, has been carefully restored over two years to a ‘maternity ward’ for wines. Not a grain of earth disturbed, not a tree felled.

We have brought forth a true cellar, one that respects the rhythms of nature and crafts the handcrafted, one-of-a-kind wine that makes our hearts sing. Concrete vats, shaped like tulip buds, alongside grand casks and a select few barrels, nurture our grapes from harvest to bottling.

Concrete, a pillar of tuscan farming tradition, offers more than space – it breathes with a natural porosity that gently aids in the wine’s aging. Beyond function, it is also incredibly beautiful on the eyes.

As for the wood we use, bear in mind the Sangiovese grape; it is regal but temperamental, much like royalty. It cannot be forced, but must be gently coaxed. Heavy oak would only suppress its voice, concealing the expressive freedom it desires. Instead, we use large casks, where the wood’s subtle touch nurtures the grape, allowing it to flourish without masking the land’s imprint on its soul.
