One Belvedere Tuscany is a 50-hectare rural hospitality and holistic wellness estate located in the municipality of Poggibonsi, within the Chianti Classico landscape and close to Castellina in Chianti.
Sustainability shapes how we farm, produce wine, manage water and energy, prepare food, design guest experiences and care for the estate’s agricultural landscape.
Our approach brings together regenerative agriculture, responsible hospitality and measurable environmental practices, supported where applicable by recognised certifications, supplier documentation and operational records.
One Belvedere Tuscany holds the 5 Eco Leaves certification from EcoWorldHotel. The current certification is valid through 22 April 2029 and reflects environmental practices assessed across the estate’s hospitality operations.
Every choice we make, from seasonal dishes to thoughtfully designed accommodation and curated experiences, reflects our intention to preserve resources while offering guests an authentic rural hospitality experience.
From farm to table, water to energy, sustainability is considered across the way the estate operates and the experiences through which guests encounter the land.
At QB Cucina, menus are shaped by the seasons and draw on ingredients from the estate’s vegetable gardens together with selected producers from the surrounding region.
The connection between the agricultural landscape and the table is part of the guest experience: what grows on the estate, what is produced locally and what is available during each season influences how food is prepared and presented.
Fresh ingredients are harvested from the estate’s gardens and sourced from selected nearby producers, allowing menus to evolve with the season and the natural rhythm of the land.
Rather than separating hospitality from agriculture, our approach seeks to create a closer relationship between what guests experience at the table and the landscape around them.
Water is one of the estate’s most carefully managed resources.
Water-saving practices include filtered wells, flow reducers on faucets and low-drip irrigation for crops and gardens. Rainwater is collected. Established vineyards were managed without irrigation during the 2025 and 2026 vintages, while limited manual water-tank irrigation was used for approximately 2.8 hectares of newly planted vineyard areas during their establishment period.
One Belvedere Tuscany also uses ultrafiltered water through the Zereau system. Filtered still and sparkling water is provided to guests, helping reduce reliance on transported bottled water.
The Zereau eco-sustainability certificate recognises the estate’s use of ultrafiltered water and its contribution to reducing emissions associated with water consumption.
Electricity supplied to One Belvedere Tuscany under its Enegan arrangement comes from renewable sources supported by Guarantees of Origin.
Timers, LED lighting and energy-efficient appliances are used across the property to support more responsible energy use.
Charging facilities for electric and hybrid vehicles also support lower-impact mobility for guests travelling to the estate.
Natural fabrics, selected wood, recycled materials and work by local artisans are incorporated where appropriate across the estate’s interiors and renovations.
Material choices are considered alongside durability, environmental responsibility, local craftsmanship and the character of the property, helping connect contemporary hospitality with the traditions and materials of the surrounding region.
Waste separation forms part of the estate’s everyday operations, together with the use of biodegradable cleaning products and on-site composting.
Organic material returned through composting is used within the gardens, helping keep useful biological material within the estate’s agricultural cycle.
Guests are also encouraged to participate in responsible waste separation during their stay.
Sustainability requires more than intention. Measurement helps us understand environmental impact, identify priorities and distinguish between practices, verified performance and areas where further progress is still needed.
In 2023, One Belvedere Tuscany, together with Locanda Le Piazze and Tavola Le Piazze, worked with Azzera on a carbon-footprint analysis aligned with the GHG Protocol.
The analysis covered Scope 1, Scope 2 and selected Scope 3 emissions within the reporting boundary established for the study.
Environmental measurement provides concrete information about where impacts occur and which activities or supply-chain areas deserve the greatest attention.
Operational data can help inform future decisions around resources, procurement, agricultural practices, technology and infrastructure.
Clear measurement and defined certification scope allow us to distinguish between what has been independently assessed, what represents current operational practice and where further progress is still required.
Understanding environmental impacts creates a stronger basis for prioritising improvements and evaluating future initiatives against measurable evidence.
Tractor operations and company vehicles accounted for 11.66 tCOâ‚‚e within the analysis.
Restaurant and spa operations recorded 26,455 kWh of electricity consumption, corresponding to 8.44 tCOâ‚‚e within the reporting methodology used for the study.
Within the reporting boundary used for the 2023 analysis, procurement of goods and services represented the largest identified source of emissions, at 984.02 tCOâ‚‚e.
Staff commuting accounted for 5.91 tCOâ‚‚e, while water use and waste were reported at 0.071 tCOâ‚‚e and 0.02 tCOâ‚‚e respectively.
These figures relate specifically to the reporting boundary and methodology used for the 2023 analysis. They are presented as historical environmental measurement and should not be interpreted as a current carbon-neutrality or emissions-reduction claim.
Across the estate, vineyards, olive groves, vegetable gardens, woodland, flowers, beehives and animals form parts of one connected agricultural landscape.
Our approach focuses on working with the land through practices including cover cropping and green manure in the vineyards, composting, soil-focused vineyard management and seasonal cultivation across the estate’s agricultural areas.
Agricultural materials are also returned to the land where possible. Pruning residues were shredded and returned to the agricultural system in both 2025 and 2026. Grape stems and pomace from the 2025 harvest were returned to the soil, while the equivalent reintegration process for the 2026 harvest was already underway at the time of the latest confirmation.
Together, these practices connect vineyard management, food production, hospitality and guest experience as parts of the same rural ecosystem.
Belvedere1 Winery is located within the One Belvedere Tuscany estate, connecting vineyard management and wine production directly to the agricultural landscape guests experience during their stay.
Sustainability-related topics are normally integrated into vineyard visits, cellar tours and guided tastings. Depending on the season and each guest’s interests, conversations may explore cover crops and vineyard vegetation, water-management choices, soil and geology, traditional Tuscan grape varieties, cellar practices and responsible resource use.
Physical soil and geological materials from different areas of the property are also used as qualitative educational tools, helping guests connect the land they encounter with vineyard location and the wines tasted afterwards.
In this way, sustainability moves beyond written communication and becomes something visitors can see, discuss and experience directly through the relationship between land, vineyard and wine.
Certifications and third-party documentation provide an additional layer of accountability by independently assessing specific areas of our operations and products.
We communicate these certifications according to their defined scope: some relate to the hospitality estate, some to specific operational services and others to selected Belvedere1 wines.

The EcoWorldHotel assessment considers operational practices across areas including energy and water efficiency, consumption monitoring, waste separation, certified cleaning and personal-care products, local and organic food, biodiversity, environmentally assessed materials and suppliers, lower-impact mobility and communication with guests about responsible resource use.

Belvedere1 Winery, the winemaking entity located within One Belvedere Tuscany, holds product-scoped VIVA verification for specified wines and formats.
One verification statement covers Balvede Toscana IGT, Primo Rosso Toscana IGT and N – Rosato Toscana IGT in 0.75 litre and 1.5 litre glass-bottle formats. Based on a 2024 analysis, it was issued by Valoritalia on 13 November 2025 and is valid until 12 November 2027.
A second verification statement covers Chianti Classico and Chianti Classico – Tenuta Carfini in 0.75 litre, 1.5 litre and 3 litre glass-bottle formats. Based on a 2024 analysis, it was issued by Valoritalia on 13 February 2026 and is valid until 12 February 2028.
The verification assesses the VIVA indicators of Air, Water, Vineyard and Territory.
These verifications apply only to the wines and formats identified in the respective statements. They do not constitute VIVA certification of every Belvedere1 wine, Belvedere1 Winery as a whole or the wider One Belvedere Tuscany hospitality estate.
