ALYA is the selection of our oldest trees in the property in the municipality of Castellina in Chianti. The field blend is made with Frantoio, Pendolino and Moraiolo cultivars. The olive grove is managed following the Organic methods and pruned with particular attention in polyconical vase, to encourage healthy growth and generous olive production.

Bottling Chianti Classico PDO olive oil requires mandatory chemical and sensory tests to ensure compliance with stricter standards than regular extra virgin olive oil. Low acidity and high levels of oleicacid, which makes this oil a powerhouse of vitamins and health-giving amino-acids.
